Inspired by the "one-pot" meals - with no-muss ingredients - cooked up by cowboys during starlit nights out on the ranch, this is a delicious Texan-style meal combining some of the American Southwest's most distinctive flavors. KitchenEssentials.com has adapted this recipe from Dave's Garden Cookbook and included everything you need to make this easy meal wherever your home is on the range. Ingredients 1 can (8 oz.) Cream of Mushroom soup 1 lb. browned hamburger or ground beef 1 can (15 oz.) ranch-style beans 2 cups crushed Fritos or tortilla chips 1 can (8 oz.) Cream of Chicken soup 1 can (8 oz.) Ro*Tel Diced Tomatoes with Green Chiles 1 medium-sized onion (chopped) 1 cup grated or shredded pepper jack cheese Combine cream of mushroom soup, browned hamburger, ranch-style beans, crushed chips, cream of chicken soup, diced tomatoes with green chilies and chopped onion in small or medium-sized slow cooker. Cook on HIGH for three hours. After two hours, top with grated pepper jack cheese. - If you're not a fan of pepper jack, the One-Pot Texas Ranch Dish is also delicious with cheddar, Monterey Jack and other shredded Southwestern cheeses. Do a little experimenting and combine your favorite cheese for a tasty twist every time you prepare this delectable yet simple meal.
- Don't eat red meat? Just substitute one pound of boiled skinless & boneless chicken breasts
- Add a little more "crunch" by sprinkling additional crushed chips on the top of the dish when topping with cheese.
- Using lean ground beef and low-sodium & low-fat soups cuts excess calories without sacrificing taste
